To celebrate the start of the new series of the Great British Bake Off, Chef Joe Hunt has provided us with his favourite bread recipe! Honey and Walnut Loaf.

HONEY AND WALNUT LOAF 200g plain flour 150g strong wholemeal bread flour 1 tsp. salt 1½ tsp. dried easy blend yeast 2 tbsp. runny honey 40g chopped walnuts approx. 260ml water

Method Mix the flours, salt and dried yeast together. Mix in the walnuts. Pre heat the oven to 200°c gas 6. Dissolve the honey in the water and add to the flours, mix together until a rough dough is formed. Turn onto a lightly floured surface and knead for 8 minutes. The dough should be smooth and elastic. Place into a bowl and cover with cling film. Leave to prove for 45 minutes to an hour. When the dough has proved turn out onto a floured surface and knock back. Stretch the dough into roughly 30cm x 15cm rectangle. Fold the dough in on itself to give it structure. Form into a round and place on a lined baking tray. Cover with oiled cling film and leave to prove for 1 hour or until the bread has doubled in size. Carefully remove the cling film. Using a sharp knife slash the bread and leave it for 5 more minutes. Place the bread into the oven and bake for 20-25 minutes or until golden brown.
