Carrot and Tomato Soup

For such simple ingredients, you will be surprised at how tasty this lovely soup is – serves 4-6.

You will need: 1 tbsp sunflower oil 1 x lg onion, 600 g carrots, roughly chopped 2 x 400 g can tomatoes, 1 litre veg stock, salt & pepper milk

make the soup: Cook the onion and carrot in the oil Add stock and tomatoes Season Cook until the carrots are soft (20 mins ish?) Blend Add a splash of milk to taste, and any extra seasoning if required.
